Aluminium vs stainless steel sufuria: which is better
Aluminium heats faster and costs less. Stainless steel stays brighter and takes a harder scrub. Most Kenyan homes still cook ugali and stew in aluminium. Steel is the better buy if you want the pot to look the same in five years.
This is a real decision, not a catalogue slogan. You will use the pot on gas, a coil or a charcoal jiko. You will scrape ugali. You will wash it at a sink that is not a show kitchen. The right metal is the one that matches that work.

When aluminium is the right pot
If you cook ugali more than twice a week, buy aluminium. Heat moves through the wall quickly, so the bottom does not sit dead while the sides stay cold. The pot is light enough to tip into a plate. Kamukunji still sells more aluminium sufurias than any other metal because that is how Kenyan homes actually cook.

When stainless steel is the right pot
Steel makes sense if you simmer bones for hours, if you want a pot that still looks clean on a hotel pass, or if you are tired of aluminium stains. It is slower to come to the boil. Once it is hot it stays hot. The stainless steel sufuria set and the 10 L steel stock pot are the usual starting points.
Ask about the base before you put steel on induction. A pretty wall does not mean a magnetic base.
Where non-stick fits

Hotels should not copy a home kitchen
A hotel line wants thick aluminium or steel that can take a burner all morning. Looks matter less than whether the pot will still sit flat after six months. That conversation belongs on commercial cooking pots and bulk and wholesale.
A plain recommendation
One home, first kitchen: aluminium set plus one non-stick pan. One home that already has aluminium and wants a second line: add steel for stew and tea. One hotel: talk to us about 50 cm and 60 cm, not about a 10-piece gift set.
